Technical Detail: the Yeast Formula
The heart of the calculator is the formula for fresh brewer's yeast, based on a mathematical model that combines time and temperature:
Fresh Yeast (g) = (grams flour × 23) ÷ (fermentation hours × hydration % × temperature °C)
Practical example: with 1,000g flour, 70% hydration, 24 hours fermentation and 21°C ambient, the calculator returns 0.65g of fresh yeast. A precision impossible to achieve by eye or with static tables.
