Roman Pizza in an Electric Oven: Dough, Shaping and Perfect Baking
Roman pizza doesn't have a crust to photograph. It doesn't explode into bubbles. It doesn't fold into a wallet. It has another ambition: to be crispy. Delicate. The kind that makes the right sound when you break it.
Roman scrocchiarella is round, thin and universal: loved by those who prefer crispiness to a cloud-like crust. And in a dedicated electric oven, with controllable temperatures and a stable stone, it turns out better than many people think. You don't need a wood-fired oven. You just need to know that the dough and baking follow different rules from Neapolitan pizza.
Here's the recipe and technique, with the numbers that matter.
Before You Start: Roman and Neapolitan Pizza Are Distant Relatives

The decisive difference is oil. It is absent in Neapolitan pizza. In Roman pizza it is optional but recommended: it shortens the gluten strands and makes the dough shorter and more delicate. Less water, more oil, more crispiness.
The Dough: Recipe for 4 Dough Balls of 250 Grams
These quantities are calibrated for 4 generous pizzas of about 30 cm in diameter. If you prefer smaller pizzas, you can go down to 180 grams per dough ball.
Ingredients
- Type 0 flour, W 250-300: 617 grams
- Water (60% hydration): 370 ml
- Fine salt (30 grams per liter of water): 11 grams
- Fresh baker's yeast: 0.9 grams (or 0.3 grams of dry yeast)
- Extra virgin olive oil (optional): 12 grams (2% of the flour weight)
Note on the yeast: this quantity is calibrated for a 12-hour rise at 21°C. If you use the refrigerator at 4°C, the time increases to 24-48 hours and the amount of yeast is reduced slightly.
Method
- Dissolve the salt in the water. The salt should not come into direct contact with the yeast: dissolving it in the water first distributes the flavor evenly.
- Knead the flour and salted water. Add the fresh (or dry) yeast to the dough. Work it until the dough becomes smooth and pulls away from the sides of the container.
- Add the oil (if using). Pour it in gradually in several additions during the final stage of kneading. The oil will make the dough softer and silkier.
- Bulk fermentation: let the covered dough rest for 15-20 minutes at room temperature.
- Shape the dough balls: divide into 4 pieces of 250 grams each. Round them with circular movements on the work surface to tighten the dough underneath.
- Rising: cover the dough balls and let them rise for 12 hours at 21°C. If you prefer the cold method, use the refrigerator at 4°C for 24-48 hours: the flavor will benefit.
Take the dough balls out of the refrigerator — if you chose that method — at least one hour before shaping. Cold dough does not roll out well and tends to spring back.
Shaping: Thin, Even, With No Mercy for the Edges
Roman pizza has no crust. This is not a flaw, it is the design.
Take the dough ball and roll it out with a rolling pin or with your hands. The rolling pin is traditional and produces a more even thickness. If you use your hands, press from the center outward with your fingertips, stretching it to 30 cm.
The rules:
- The thickness must be even: 2-3 mm across the entire disk.
- Do not leave a thick edge. The topping should be spread all the way to the edge. The edges must be as thin as the center.
- The center should not be transparent, but it should be thin. If you can see the work surface through the dough, it is too thin.
If the dough springs back while you are rolling it out, wait 5-10 minutes. Roman pizza should not be forced into shape.
The Topping: The Right Amounts to Avoid a Soggy Base
The base is thin and bakes in 4-5 minutes: there is no time for mistakes in balancing the ingredients.
- Tomato passata: 80-100 grams per pizza. Spread it with the back of a spoon in a thin, even layer.
- Mozzarella: 80-120 grams per pizza. Small pieces or thin shavings are better: they melt better in 4-5 minutes than thick slices. If you use buffalo mozzarella, drain it well beforehand.
- Extra virgin olive oil and basil: add raw, after baking.
Warning: too much tomato or too much mozzarella will make the base soft. Roman pizza handles generous toppings better than Neapolitan pizza, but in an electric oven the rule is: spread everything evenly, do not pile it up in the center.
Baking: 300-320°C for 4-5 Minutes
This is where the dedicated electric oven (Diavola Pro v3) makes the difference. Maximum power is not necessary. Roman pizza calls for control, not violence.
Settings
- Stone temperature: 300-320°C. No higher: at higher temperatures the base burns before the topping is ready.
- Bottom heating element: it should be more active than the top one. The base must cook through direct conduction on the stone.
- Top heating element: moderate. It only needs to melt the mozzarella and lightly brown the surface.
- Preheating: 15-20 minutes are enough to bring the stone to 300°C.
Baking Technique
- Place the pizza in the center of the stone.
- Start the timer: 4-5 minutes total.
- At halfway through (after 2-2.5 minutes), rotate the pizza 180 degrees. Heat is never perfectly even: rotating the pizza balances the baking and produces an even color.
- Check the base before taking it out: it should be golden and crispy.
Why 4-5 minutes? Roman pizza is thin and the oil in the dough accelerates browning, but at 300°C it needs time to properly cook the topping without burning the base. The 90 seconds used for Neapolitan pizza would be a disaster here: raw mozzarella and cold tomato.
The Most Common Mistakes
1. Neapolitan temperatures
Setting the oven to 450-500°C for Roman pizza is a mistake. At those temperatures, the base burns in 90 seconds while the topping falls behind. Stay at 300-320°C.
2. High crust
If you leave the edge thick, you end up with an unpleasant hybrid: crispy in the center, chewy around the edges. Roman pizza should be rolled out evenly, edges included.
3. Dough that is too highly hydrated
Neapolitan-style hydration (65%+) creates a disaster with Roman pizza. The dough sticks, cannot be rolled out thinly, and bakes unevenly. Stay at 55-60%.
4. Cold dough ball
Rolling out dough straight from the refrigerator is frustrating: it springs back, tears, and refuses to cooperate. Always wait until it returns to room temperature.
5. Too much topping in the center
The thin center cannot support piles of mozzarella. Spread everything evenly or the base will give way under the weight.
How to Make a Good Roman Scrocchiarella Pizza
Roman pizza in an electric oven is not a fallback: it is a style that takes advantage of the versatility of the appliance. While Neapolitan pizza needs intense and immediate heat, Roman pizza calls for precision and moderation. 300-320°C, 4-5 minutes, one rotation halfway through baking.
The dough is easier to manage than Neapolitan dough: less water, more forgiving, and a shorter rise if needed. Shaping is more intuitive. The result is different, but not inferior: it is simply another kind of pizza. Crispy, fragrant, perfect for those who love the sound of the crust before the flavor.
