The new Diavola Pro rotating system allows you to rotate the pizza during cooking without fully opening the clam-shell oven.
Thanks to a stainless steel ring on which the tray holding the Casapulla stone rests, it is possible to rotate the stone—and therefore the pizza—while keeping the oven almost completely closed.
This prevents heat loss and temperature drops, ensuring optimal baking typical of authentic Neapolitan pizza.
Moreover, by minimizing oven openings to check the cooking process, cooking times are reduced and the stone's thermal recovery is optimized.
